Baking Adventures!

I really need to start photo documenting my baking process so I can put up an actual step by step recipe for these things. I never think about it till I’m done!

Two days ago I tried another apple pie. This time the crust turned out perfectly and I was able to make the lattice crust! Apparently though it wasn’t quite as flaky as the failure crust… Go figure.

The salted caramel sauce I made for on top was a big hit again! It’s so delicious and so easy, I think I’ll have some constantly on hand!

For those interested:
Ingredients:
1 cup sugar
6 tbs butter (cut into cubes)
1/2 cup heavy cream
1 tsp salt
To make it you melt the sugar over medium heat (use a rubber spatula or wooden spoon. I learned the hard way that plastic melts! Blonde moment!)
Once the sugar is completely melted it will be a dark brown liquid. Be careful to stir constantly so it doesn’t burn!
Add the butter, but be cautious as it will bubble when you do this step.
After the butter is melted slowly pour in the heavy cream while whisking the mixture. Again the liquid will bubble a bit.
Let the caramel boil for a minute while continuing to stir then remove it from the heat and stir in the salt.
Store it in the fridge when you’re done (I use mason jars but any microwave safe container you have on hand should work) and heat it up as you need to use it!
It’s delicious on ice cream, pie, cookies, and with a spoon! ;)

Tonight I made a dessert I actually like (I’m not an apple pie fan); cheesecake! This was no simple cheesecake though, it is topped with a chocolate peanut butter mousse, chopped Reese’s and a chocolate drizzle! Yum!!

If anyone would like the recipe for this one I can certainly write it down, but I won’t take all that time if no one is interested!
